Chloe Likes To Eat

Now, don't faint in shock or horror, but this is something I cooked. Yes me, not my Dad, not a restaurant chef, moi! I can cook, for those of you wondering, it's just that I don't need to most of the time. That said, I'm quite lazy when it comes to cooking for one, and this is a fairly typical Chloe-home-alone-can't-be-bothered meal.

I love things like these supermarket breaded cod fillets, they're great to shove in the freezer for lazy evenings, or working late etc. I topped mine with a touch of grated cheddar for a bit of sharpness. The overall beauty of this particular dinner, it took all of 10 minutes to prep. The potatoes were par-boiled, then went onto a tray in the oven with the smallest drizzle of olive oil and pepper, the fish joined the potatoes, 20 minutes later the beans went into boiling water for 4-5 minutes as the fish had the cheese added to the top just before serving. Those 20 minutes in the middle were used to do some ironing.

Healthy, balanced, quick and simple. Perfection.
