Chloe Likes To Eat

Pretty much posh beans on toast. Lunch on a busy Friday with my Dad hurriedly trying to make sure that I'm up to the challenge of managing our business without them in a few weeks time.



I thought I'd try adding recipes for some of the things I actually know how to make (that's not to say that I actually made this, don't be silly people!). Your input, as ever is appreciated. Let me know if it's a yay or nay to the recipes.

Ok so:

You will need-
A slice of bread for toasting
a tin of chickpeas- half a tin should do 3 portions with the volume of extras outlined below
a red onion
vegetables of choice- in here we have a half a pepper, a handful of green beans and a few cherry tomatoes (**cough**leftovers**cough**)
curry powder or spices- you could also use mustard for a milder or a different flavour

1. Gently sweat the onions in a pan
2. Add your chickpeas and vegetables
3. Add the cream cheese and stir in- start with just a table spoon and stir until melted. You can always add more, but you don't want too much.
4. Add the mustard (about a teaspoon to each tablespoon of cream cheese) or the curry powder or spices (to taste)
5. Stir well
6. Spoon onto toast and scoff.
