So when the Baking Mad people contacted me about recreating one of their recipes, I thought I'd probably like to get my patriotism on and try one of these Jubilee Recipes, or maybe a Victoria Sponge being as it's so very quintessentially English. But then I saw these...
These beauties are Anzac Biscuits. A scrummy, slightly chewy coconut and oat round biscuit of goodness. See thing is, I quite like cake. But I'm a biscuit girl at heart. I love me a decent cookie, chewy centred with chunks of chocolate, or a crisp and crunchy ginger nut or crumbly every so slightly salty digestive... You get the picture.
I've never made these before, but it took me all of about 10 minutes to put the mix together and they take about 10 minutes to cook. 20 minutes to get my biccie fix is pretty good, although waiting for them to cool could be a problem, if like me, you need your fix swiftly after baking....

Those look really yummy! I think I've really missed British baked goods since I've been away as in HK, few people actually have ovens. So I'm totally marching down to the supermarket and buy things to bake!

Oh wow, those look proper scrummy! I'm a real cake girl, I've just eaten 3 slices of cream cake! I love biscuits too, anything fattening really :P haha
They are seriously yummy. But one tiny recommendation I would make- instead of using plain flour and Bi-Carb, just use self raising flour and omit the Bi-Carb.
Shall I point them in your direction?
Did you make them in the end? I'd say the biscuits might be better with self raising flour instead of Bi-Carb and plain flour. It's what I'm going to try next time.
Did you bake in the end? I know what you mean, it was like that in France, microwaves, hobs, no ovens!

Birthday Cream Cake I should hope! I love all the sweet, calorific, high fat goodies too, but my metabolism just can't hack too much of them!
These look so good! Think I might have to get a baking fix tomorrow with some cupcake baking.
